Fresh Veggies!

I love going to the farmers market in the summer, waking up early (maybe not) before the pool and grabbing some fresh veggies and flowers so I can make one of the 1,000,000 recipes I have on Pinterest.  And this one is a favorite! It's even better as leftovers! I think this could stand alone with a side of fresh bread, I served mine with grilled chicken, pesto and lemony orzo pasta! mmmm

Fresh Corn and Tomato Salad
adapted from allrecipes.com

6 ears corn
3 large fresh tomatoes ( I used Heirloom)
1/2 large onion or about 1 cup chopped ( I used a sweet onion)
1/2 cup chopped fresh basil
two to three sprigs fresh oregano (optional)
2 tablespoons white vinegar ( I used white balsamic)
1/4 cup olive oil
Juice of one lemon
coarse sea salt
fresh ground pepper

Boil corn in large pot of water for about 7 minutes. Drain and plunge corn into cool water. Cut corn off cob and set aside to cool completely.
Chunk tomatoes and onion. Coarsely chop basil and strip the oregano off stems. Place cooled corn, chopped vegetable and herbs into large bowl. Toss with vinegar and olive oil. Season to taste. Serve chilled or room temperature

Tips:
-The recipe called for white vinegar, but I love white balsamic (sweeter) vinegar. Apple cider vinegar would also work. I don't recommend regular balsamic vinegar. The dark red color will discolor the onion and corn and the overall look of the salad will change.

Lemon Basil Pasta

Absolutley one of the best meals I have had recently, The Pioneer Woman's Grilled Chicken with Lemon Basil Pasta!
 I found this on Pinterest forever ago... why did it take me so long to make it?? No pics of my dinner - it was gone before we even had a chance.  So easy to make..... this makes me want to have a dinner party soon!

Another great weekend!! We had a great time at Cameron's Graduation party, loved the cake (the cute cake topper and chocolate bourbon flavor...mmmmm!!!) and drinking out of mason jars all night!

Wedding Season

What's your favorite time of year??

ummmmmmm....... that would be WEDDING SEASON!!!

I'm so excited for my friends wedding in Georgia, it's going to be a big southern TriDelta reunion :)
I'm throwing her a shower and thank you Pinterest for all the ideas, now I just need to narrow them down! there's food, drinks, decorations, my outfit!!!

First day on the job and I couldn't stop thinking about how I'm going to dress up my cubicle - it's very grey.

Pinterest DIY - Roman Shades using Mini Blinds

I love Pinterest and I finally have enough free time for all the projects I've pined. I've had a whole week off before my new job starts (YES!!!!) and I've organized and cleaned like crazy - time for a fresh start! 
 This is the perfect time to tackle making roman shades using mini blinds, my side door could use something pretty :)

My inspiration - The Little Green Notebook, I love this blog!!


I would have included a picture of the door before but it was pretty bad- we'll skip that. Please refer to the link above for the Little Green Notebook, she has several pictures that explain how to do this - it's pretty easy.
All you need it a piece of fabric to fit your window, blinds, fabric glue and a tape measure.
And you'll have something like this!!

(needs some trim though don't you think, maybe red or pink??)

Bahamas

I'm already missing the beautiful clear blue water, the warm weather and laying on the beach sipping on tropical cocktails, the sea, the sun and sand.

I woke up to a few very friendly sea gulls that flew into our room one morning too - literally they were in the bed with me!!!!
